Harvesting sap

This year we tapped 275 trees on our property (and on our generous neighbors' land too). That means we drilled 275 holes, hung 275 buckets, and collect 4 gallons of sap in each one every time the sap freezes at night and thaws to run in the day.

Boiling

Dad cuts wood all year round to prepare for this 4-week season. The evaporator in the sugar shanty boils 20 gallons of sap into a half gallon of syrup each hour. That's a lot of hours of relaxation in what I like to call the syrup sauna.

Canning

Once the sap has finally become syrup we filter this nectar of the gods three times, fill the jug, and seal it to preserve freshness and lock in the magical tree fairies that come with each order.

Maple Cream

Because I can never just stop at "good enough" I am compelled to make the most delightful treats from the syrup. Maple cream has long been a seasonal delight in our home and I highly encourage you to spread it over toast with a little butter (or a lot if you are like me). Maple cream is essentially made by stirring maple syrup until your arm falls off.

Maple Candies

How do you NOT make these tiny gorgeous candies when you see a mold like that? Maple sugar candies are really just a portable way to get your maple fix when you are on the go. They also make beautiful gifts.

David Neuroth

Mariah neuroth

David is the dad in the Neu Maple duo (Lacy is the dog but she's not very helpful) and he has been making maple syrup in Northern NY for 70 years. After a successful career as an engineer he and his wife Debbi retired back to the north country where he's back to his maple ways and now passing the tradition on to Mariah.

Mariah neuroth

Mariah is the daughter (she has a cat named Gogo who is unfortunately for you not pictured here). Mariah, similar to Lacy, is not very helpful (yet) but she sure can lug a 5 gallon bucket of sap and stoke the wood fire to help boil. She is converting a shuttle bus to a tiny home and learning everything she can about maple!
